San Marzano is an Italian heirloom famous for its use in Neapolitan pizza and other Italian dishes. The long Roma-type fruits weigh 3–4 oz with pointed ends, thick dry flesh, low acidity, and few seeds. Very productive 6-foot plants have good disease resistance, and the variety is an excellent choice for canning recipes with sufficient added acidity.
