Purslane Greens
Purslane is a surprisingly delicious and extraordinarily nutritious succulent green with thick, glossy, paddle-shaped leaves and a mild, slightly tart, lemony flavor with a pleasant juicy crunch. Long eaten across the Middle East, Mexico, and the Mediterranean, it is exceptional in fattoush, tossed into salads with tomatoes and cucumber, or wilted quickly into eggs and stir-fries. It also happens to be one of the richest plant sources of omega-3 fatty acids — making it perhaps the most overlooked superfood in the garden.
