Ping Tung Long is a Taiwanese heirloom eggplant prized for its exceptionally slender, elegant, lavender-purple fruits that grow to 12–18 inches with uncommonly tender, sweet flesh and thin skin that requires no peeling. Its mild, delicate flavor and creamy texture are extraordinary — far less bitter than Italian varieties — making it perfect for quick stir-fries, grilling whole, or Chinese braised eggplant dishes where its silky texture is the star.
