White Vienna Kohlrabi is a pre-1860 heirloom with pale green skin (despite the name) and crisp, white flesh with a mild, sweet, cabbage-like flavor that's genuinely delicious eaten raw — sliced thin and eaten like an apple with a sprinkle of salt, julienned into slaws, or quickly stir-fried. The compact, 2–3 inch bulbs are practical and fast-maturing, and the refreshing crunch and clean flavor make this one of the most underappreciated cool-season vegetables available. A worthy addition to any spring or fall garden.
