Upland Cress — also known as Winter Cress or Creasy Greens in the South — is a wonderfully versatile cool-season green with mildly peppery leaves, shoots, and flower buds that are all delicious. Long a beloved foraging green and kitchen garden staple in Appalachian cooking, it's outstanding raw in salads, quickly wilted with garlic and vinegar, or used as a peppery garnish wherever a fresh, watercress-like bite is welcome. Cold-hardy and prolific, it provides fresh greens through some of the most challenging growing conditions.
