Rosita Eggplant is a 1940s Puerto Rican heirloom with a beautiful light purple skin, creamy white flesh, and a tender, never-bitter character that makes it one of the most approachable and delicious eggplants for anyone who has been put off by bitterness in other varieties. The medium-sized fruits are heavy-yielding and cook quickly with a creamy texture that absorbs flavors beautifully — outstanding grilled, roasted into caponata, or fried in olive oil with garlic and herbs.
