Rosa Bianca is a classic Italian heirloom eggplant with beautiful deep purple and white streaking on medium-sized, 6–8 oz fruits and a notably sweet, mild flavor that needs no salting and has none of the bitterness sometimes associated with eggplant. More pest resistant and drought tolerant than many varieties, it produces reliably without demanding constant attention, and the delicate flesh is outstanding grilled, roasted, or slow-cooked into a silky caponata or baba ganoush. A genuinely elegant Italian variety.
