Red Malabar Spinach is a gorgeous Asian heirloom with stunning ruby red stems, massive succulent dark green leaves, and a mild, slightly mucilaginous flavor similar to New Zealand spinach that makes it an outstanding warm-weather spinach substitute when true spinach has long since bolted. The spectacular climbing vines are as ornamental as they are useful — growing up trellises and arbors with tropical lushness all summer — and the thick, substantial leaves hold up beautifully in soups, stir-fries, and quick sautées.
