Ping-Tung Long Eggplant is a beautiful Taiwanese heirloom that produces slender, 12–16 inch fruits with glossy, deep purple skin and exceptionally tender, mild flesh. The thin skin eliminates bitterness and the need for salting, and the meat cooks quickly and evenly — perfect for stir-frying with ginger and garlic, grilling whole, or slipping into Thai curries and Sichuan braised dishes where this variety has been prized for generations. Compact, vigorous, and capable of producing 20–25 fruits per plant.
