Lacinato Kale — also known as Dinosaur Kale or Tuscan Kale — is the darling of farmers' markets and restaurant kitchens for good reason: the long, dark blue-green leaves with their distinctive bumpy texture have a sweeter, more tender flavor than curly kale, making them equally at home raw in a massaged salad, braised in olive oil with garlic, or crisped into kale chips that actually taste as good as they look. Cold-hardy to an extreme, frost only improves the flavor.
