Hollow Crown Parsnip is a lesser-known but deeply rewarding root vegetable with a flavor reminiscent of both potato and carrot — sweet, earthy, and nutty — that develops its finest character after frost sweetens the roots through the autumn and early winter. The large roots average 12 inches or more in length with a smooth, cream-colored skin and a tender flesh that's outstanding roasted until golden and caramelized, mashed with butter and cream, or slow-cooked in rich winter braises.
