Cucuzzi Squash
Cucuzzi Squash is a dramatic Italian heirloom also known as snake gourd for its ability to grow in long, twisting, serpentine shapes that make it one of the most visually theatrical plants in any garden. The flavor is mild and delicate — somewhere between cucumber and zucchini — making it wonderfully versatile in Italian cooking: stuffed and baked, sliced into soups and stews, or sautéed simply with garlic and olive oil in the way generations of Italian grandmothers intended.
