Chicory
Chicory is a versatile and deeply flavored plant with pleasantly bitter leaves that add character and sophistication to salads, braised dishes, and roasted preparations. The striking blue flowers that appear in summer are among the most beautiful in the vegetable garden and highly attractive to pollinators. The roasted root is the classic caffeine-free coffee substitute with a rich, earthy bitterness, while the forced pale heads — known as Belgian endive — are a delicacy in European winter cooking.
