Lacinato Kale — also known as Dinosaur or Tuscan kale — is one of the most tender and flavorful kale varieties you can grow. Deeply savoyed, dark blue-green leaves on exceptionally vigorous 24–36" plants that sweeten with every frost. Our strain is improved for vigor, yield, and cold hardiness, making it ideal for raw salads, soups, and braised dishes from baby leaf stage all the way to full size.

Growing tips

🌱Direct sow or transplant 4–6 weeks before last frost for a spring crop, or start in midsummer for a fall harvest. Kale is one of the most cold-hardy brassicas — it survives hard frosts and tastes better for it.

☀️Plant in full to part sun with fertile, well-drained soil. Space 12–18" apart to allow the large, vigorous plants to develop fully. Consistent moisture and feeding keeps leaves tender.

✂️Harvest baby leaves at 30 days for salads, or outer leaves at 60 days for cooking. Always harvest from the bottom up — leave the growing tip intact and plants will keep producing for months.

🌿For the best flavor, harvest after a frost. Cold temperatures convert starches to sugars, giving Lacinato a sweeter, more complex taste that raw kale salad lovers rave about. Massage leaves with olive oil and lemon to tenderize before serving raw.
