Hyssop (Hyssopus officinalis) is an ornamental shrubby herb used to season poultry, with a camphor-like odor and strong flavor derived from its volatile oil constituents. Medicinally, hyssop tea flavored with honey is used as an expectorant, with the flowering tops collected in August and dried in the sun for later use.
