Chioggia is one of the most stunning vegetables in existence — an Italian heirloom beet that when sliced open reveals concentric rings of candy-pink and creamy white, earning it the nickname Candy Cane Beet. Its flavor is mild, sweet, and less earthy than standard beets, a favorite eaten raw, roasted, or pickled. The striking pattern is especially spectacular served raw in salads where its beautiful cross-section can be fully appreciated.
