Pacific Beauty Calendula produces bright yellow-orange flowers about 3 inches across that are used as a food colorant, natural dye, and substitute for saffron; for culinary use, the outer part of the petals is best as the base can be bitter. Medicinally, calendula is traditionally used as an anti-inflammatory herb for localized skin problems and is reported to activate cellular defense mechanisms. Plants tend to fade in deep summer heat but can be reseeded for a late summer and fall harvest.
