🌱Direct sow as soon as soil can be worked in spring, or again in late summer for a fall crop. Beet seeds are actually seed clusters — thin to one plant per spot after germination.

💧Keep soil consistently moist for even germination and smooth root development. Dry spells cause tough, woody roots — mulch helps retain moisture between waterings.

✂️Harvest baby beets at 1 to 2" for salads, or let them size up to 3" for roasting. Tops are edible at any stage — treat young leaves like spinach and mature greens like chard.
