Mexican Tarragon
Mexican Tarragon — also called Texas Tarragon or Mexican Mint Marigold — is a heat-tolerant herb with golden-yellow daisy flowers in late summer and a clean, sweet anise flavor in its narrow, lance-shaped leaves that is arguably superior to French tarragon in warm climates. The fresh and dried leaves are wonderful in classic béarnaise sauce, herb butters, vinaigrettes, and chicken dishes wherever French tarragon is called for. Its showy flowers and drought tolerance make it a beautiful and practical dual-purpose garden plant.
