White Scallop Squash is an ancient heirloom variety dating back to 1591 with uniquely flattened, scalloped fruits that ripen from pale green to creamy white and have a mild, tender, buttery flavor that's excellent stuffed whole with savory fillings, sliced and quickly sautéed, or grilled until the edges caramelize. The compact bush plants require minimal space and produce prolifically, making this one of the most practical and visually distinctive summer squash varieties for urban gardens, containers, and small raised beds.
