The classic salsa chile, this variety produces medium-hot, thick-walled peppers measuring 1-1/2 by 2-1/2 inches that are usually harvested green but can be left to mature to red or ripened indoors. A chipotle is a smoked red jalapeno, and a teaspoon of jalapeno vinegar makes excellent seasoning for bean soups. Jalapenos filled with cream cheese and fried are a beloved Southern specialty.
