Ancho Poblano Hot Pepper
Ancho Poblano is the classic choice for chiles rellenos when harvested fresh and green, at which stage they are known as poblanos. After ripening to red and then being dried, they are called anchos and are used in mole, adobo, and other traditional sauces. Chunky fruits grow up to 4 inches long, are usually mild when green, and may become slightly hotter when fully red.
