Sandwich Island Mammoth Salsify is a pre-1900 heirloom root vegetable with easy-to-grow roots reaching about 8 inches long, and a uniquely delicious flavor variously described as oyster-like, scallop-like, or artichoke-like. Roots are sweetest after frost and are versatile enough to stew, bake, or serve in a cream sauce. Even the shoots, buds, and young leaves are edible, making it a true whole-plant crop.
