Growing tips

🌱Direct sow in spring as soon as soil can be worked. Sow seeds 1" apart in rows 12–18" apart, then thin to 3–4" once seedlings are established. Salsify is easy to grow and largely trouble-free once established.

🪴Prepare deep, loose, stone-free soil for straight roots. Like carrots and parsnips, rocky or compacted soil causes forked, misshapen roots. Raised beds or deeply tilled ground work best.

❄️Leave roots in the ground through the first frosts — cold temperatures dramatically improve the flavor. Roots keep well in the ground through winter in most climates, so harvest as needed rather than all at once.

🍽️Peel and slice into a cream sauce, stew with butter and herbs, or roast until caramelized. The oyster-like flavor pairs beautifully with seafood dishes as a substitute or complement. Young spring shoots can be eaten like asparagus — a true whole-plant crop.
