This rare Chinchi strain of the Aji Amarillo (C. baccatum) is fruity and flavorful with medium-high heat, bearing smaller peppers of about 3 by 1/2 inches and maturing much earlier in the season than the standard Aji Amarillo. A heavy yielder and a favorite in a 2016 pepper taste test, this pepper is a key ingredient in Peruvian cuisine.
